Probably because it was once a luxury item and seems decadent. It's also not exactly good for you. Though we also associate sugar with fun, frivolity, and childish joy--which are not sins.

I rather thought it was the inclusion of chocolate and butter that made Devil's Food especially sinful.

I'm not sure if the latter part of that is sarcasm, but I think that's exactly it. It's "sinful" because it makes you happy, contributes to weight gain, and tastes good.

The labeling of items as a Vice or Virtue is often more to do with church or society policing other people's right to outward or "excessive" enjoyment of things, and less to do with actual issues of morality.
